A caterer for over 25 years Wendy’s experience ranges from beginning as a catering managers assistant at 18 on HMS Belfast, (organising parties and events) to currently owning Carriages café a luxury eaterie in a Victorian building at Newark Castle Station which opened 2 years ago.

With a constant eye ‘on all things Green’ she began Ecocuppa to encourage customers to bring their own cups and the scheme has picked up a few other cafes that have adopted the ethos too.

Her latest project is building a bulk quantity, volunteer-led collection of waste coffee products (used grounds and sacks) with the assistance of people that, for various reasons, have become isolated.

Testing is currently underway to turn the waste into bio-fuel for “green energy” with the aim to use the energy to make briquettes produced from the residue that can be used in wood burners.

The bio-fuel production, the environmental improvement and reduction of waste and the community involvement with training and support of volunteers collectively keep her very busy.
